Ingredients
- Apples - 13 kg
- Sugar - 6 kg
- Water - 10 L
- Grapes - 0.5 kg
Step cooking
- We take 13 kilograms of fresh apples and cut into small pieces without a core and pits. It is better to take apples from your personal garden, you can not rinse them, since they have natural yeast on top, which is very important for brewing homemade wine. Also, for the preparation of homemade wine, absolutely any kind of red, yellow and green apples is suitable. The main thing is that they are ripe. It is also allowed to mix more acidic apple varieties with sweeter ones.
- Next, pour 3 kilograms of sugar into the chopped apples and pour 10 liters of clean water at room temperature.
- Now pour 0.5 kilograms of slightly overripe grapes or 100-150 grams of raisins. Grapes need a little kneading hands.
- Mix all the ingredients thoroughly to completely dissolve the sugar.
- We cover the barrel with a lid and send the wine to brew in a warm place for 6 days. Every day you need to mix it 2-3 times.
- After 6 days, remove the apple cake and pour the liquid into a large glass container with a wide neck. Add 3 kilograms of sugar to the prepared apple juice and mix it thoroughly. The output of the wort will be 28 liters. We fill the glass containers by 2/3 so that there is room for fermentation. We leave to wander the wine for 10-14 days. Then try it: if it is sweet, then you do not need to add anything, but if it is sour, then you can add a little sugar. The total fermentation of wine is about 1 month.
- After a month, the precipitate must be removed. To do this, take the silicone tube and lower the end of the tube, not reaching the sediment 2 centimeters. Pour the wine into a clean container.
- The remaining precipitate is filtered using gauze folded in several layers. We prepare the prepared wine in a cold room under a water lock. After a week, remove the wine again from the sediment, using the method described above. After 10 days, remove the wine from the sediment for the last time and pour it into the containers in which it will be stored. We leave the wine to roam for 2-3 months in a dark and cool room, at a temperature of about 8-15 degrees.
