Step cooking
- We prepare the chicken carcass: we remove the remaining columns of feathers, if necessary (if the carcass remains a cannon) we singe it on a fire and wash it with water. We remove the gland above the tail.
- Cut the prepared chicken in half from the side of the breast, along the keel. Lightly cut the ribs near the spine to give the carcass as flat as possible. We cut off the neck, remove the offal along the spine, excess skin and fat. Turn the chicken carcass upside down, cover it with cling film and beat off with the flat side of the hammer.
- We make small incisions-pockets along the back and insert the wings into these pockets. This is necessary so that the wings do not claw and burn.
- Cut one large clove of garlic into thin slices. We make small incisions in the meaty parts of the carcass and insert the garlic plates into them. So that they are well fixed there and do not slip out, you can dip each plate in salt before inserting.
- Salt the carcass on both sides, rubbing salt into the meat with massaging movements. Be sure to pay attention to the composition of the seasoning that you intend to use: if it contains salt, then, accordingly, you need to salt the carcass less. Coat the chicken on both sides with vegetable oil and sprinkle with seasoning. It will need about 2-3 teaspoons. Although, this is a matter of taste, and if you like a more rich aroma of spices, you can not spare it.
- Cut the baking sleeve and pack the carcass into it. Naturally, you need to take the length with a margin in order to freely place the spread chicken in it and tie the ends of the sleeve on both sides. Better then cut off the excess. In this packed form, leave the chicken to marinate for a couple of hours. There will be no disaster if you send it to the oven right away, but it will turn out tastier and more aromatic if it is saturated with all the spices before it gets into the oven.
- After two hours, preheat the oven to 200 degrees, put the pickled chicken in a sleeve on a baking sheet and send it to bake on the lower tier of the oven for about 50 minutes. After this time, remove the pan from the oven. We cut the sleeve (do it carefully, as steam has accumulated in it that can be burned), straighten it so that the surface of the chicken is exposed. And again we send the pan to the oven, now for 10 minutes - to form a golden crisp.
- We take out the finished chicken from the oven, transfer it to a beautiful dish, and call everyone to the table.
