Cooking dough
- Separate a small piece of oil from a piece of oil that is intended to lubricate the mold (20 g). Melt the rest of the butter over low heat (200 g). Cool the oil to room temperature.
- Pour the melted butter into a large bowl. Salt a little (pinch of salt). Add two tablespoons of sour cream (70 ml) to the oil. Stir the mixture well until smooth with a whisk.
- Add flour baking powder (1 teaspoon) to flour (160 g). Sift the flour.
- Add flour to the sour cream mixture. Mix the mass with a cooking spatula or by hand.
- Put the dough on a silicone mat, knead it. The dough is soft and plastic.
- Wrap the dough in cling film and refrigerate for 30 minutes (minimum).
Cooking cream
- Pour sour cream (200 ml) into a bowl, beat in an egg (1 pc.). Mix well with a whisk.
- Add granulated sugar (200 g). Stir the mixture with a whisk until sugar dissolves. It is advisable that the sugar is dispersed as much as possible.
- Add flour (30 g) in small portions to the mixture, about 3-4 times.
- Mix well with a whisk until smooth.
Preparing the filling
- Wash apples (4 pcs.). For this cake, it is better to take a variety with pronounced sourness. Peel apples, remove stalks and seeds.
- Cut into thin slices. Cover so that the apples are not weathered.
Pie assembly
- Remove the dough from the refrigerator, remove the cling film. Lubricate the bottom and side of the split mold with a diameter of 23 cm with butter (20 g). At the bottom, put a piece of parchment paper cut to fit the shape.
- Roll out the dough into a thin circle, put in a mold. Form the sides about 3 cm high.
- Align the edges of the sides with a round pizza knife.
- Pour apples on the dough, smooth the layer with your hand. The thickness of the layer of apples should be the same.
- Stir the cream with a whisk, pour the cream onto a layer of apples in a thin stream. Try to cover the whole layer of apples with cream.
- Lightly tap the mold on the table (hold the mold with your hands on opposite sides) so that the apples and cream are evenly distributed in the filling layer. Bake an apple Tsvetaevo pie in an oven heated to 180 ° C for 45-50 minutes.
- Remove the finished cake from the oven, let stand for 20 minutes, remove from the mold. Cool.
If desired, add vanilla sugar to the cream for added flavor. To make the pastry look beautiful, lay the top layer of apples artistically.
