Step cooking
Cook the dough and bake the base
- Combine wheat flour (200 grams), powdered sugar (40 grams), softened butter (80 grams) in a large bowl and beat in a chicken egg (1 piece).
- Hand knead the dough.
- Once the dough has formed into a lump, take a mold with a diameter of 22 cm, line the bottom of the mold with parchment paper and spread the dough with your hands on the mold, closing the bottom and forming sides about 3-3.5 cm high.
- Pierce the cake and sides often with a fork so that the dough does not rise during baking.
- Cut the parchment the size of the bottom of the cake and line the dough with it. Pour some load on the parchment so that the dough does not rise. The role of the cargo can be performed, for example, by rice groats.
- Place the cake in the oven for 15 minutes, preheated to 180 degrees.
Cooking curd filling
- Put dry cottage cheese (350 grams) in a deep bowl. Add sugar powder (3 tablespoons) to it and beat in chicken eggs (2 pieces). Pour vanilla sugar (1 sachet) and add fat sour cream (200 grams).
- Mix all the ingredients thoroughly with a tablespoon.
- Salt the mass by adding a little salt (5-7 grams) and mix well. If lumps remain in the curd-sour cream mass, this is not scary. The filling is ready.
Cooking sauce
- Put frozen strawberries (300 grams) in a saucepan.
- Add sugar (6 tablespoons) to the strawberries.
- Boil until the sugar has completely dissolved and the strawberries become soft.
- Smash the hot strawberries in sugar syrup with a blender into a uniform consistency.
- Introduce the butter (30 grams) into the hot syrup and beat with a whisk. The sauce is ready.
Putting Baking Cheesecake
- After 15 minutes, remove the base cake from the oven. Gently, holding the cake, pour out a load of it in the form of rice groats and remove the top parchment sheet.
- In the cake, put the prepared curd filling and evenly distribute it with a tablespoon.
- Put the biscuit cheesecake in the oven at 170 degrees for 1 hour. Do not open the oven while baking.
- Exactly an hour later, remove the cheesecake from the oven and leave it in shape until it cools completely. Remove the mold only when the cake has completely cooled.
- Cut the cooled cheesecake into portions (8-10 servings). Pour the sauce into a small bowl for each and decorate with mint leaves. Each guest will independently, to their taste, pour cheese curd cheesecake with sweet fruit sauce.
