Step cooking
- Separate the yolk from the protein and arrange them in different bowls.
- Add sugar (30 grams) to the protein and beat with a mixer until stable peaks.
- Put cream cheese (100 grams) in the yolk and grind with a culinary spatula to a homogeneous consistency. In the resulting mass, put creamy yogurt without filler (30 grams) and mix until smooth. Mix the yolk, cream cheese and yogurt with a mixer in a lush mass.
- In several steps, combine the whipped protein with the yolk mass. Add the whipped protein in small parts to the yolk mass and mix gently. In total, 3-4 doses are needed.
- Wrap foil in a disposable container or baking dish so that water does not get wet. Put 2/3 of the dough into the mold and gently tap it on the surface of the table so that excess air bubbles come out. This ensures that the surface of the cheesecake does not crack during baking.
- For the remainder of the dough, add melted chocolate (30 grams) and mix well.
- Put the brown dough into the shape with a wavy line using a spoon. Draw a marble pattern with a wand. Tap the shape of the dough on the table surface to remove air bubbles. Place the pan in the pan and pour hot water in the pan so that it reaches half the pan wrapped in foil. This baking method also protects the cheesecake from cracks on the surface. Bake a mascarpone cheesecake in an oven preheated to 170 degrees for 30 minutes. Throughout the baking process, opening the oven door is prohibited.
- Pull the finished cheesecake out of the oven and let cool at room temperature. When cooling, cheesecake carefully with a sharp knife to separate from the walls of the form - this will also reduce the tearing of the upper layer. After cooling, cover the cheesecake pan with cling film and refrigerate for 4 hours. After time, a gentle creamy dessert is ready.
Decoration methods and presentation options
Use fresh berries and mint leaves to decorate the mascarpone cheesecake. To do this, rinse and dry whole berries (raspberries, strawberries, currants or blueberries) on a napkin. Lay dry berries on top, sprinkle with powdered sugar and garnish with mint leaves.
