Step cooking
- For the base with a blender, grind 250 grams of cookies.
- Melt in a microwave 80 grams of butter and mix it with cookies. If the cookies are unsweetened, you can add a tablespoon of granulated sugar or liquid honey.
- We cover the detachable baking dish with parchment paper and spread the cookies in a layer on the bottom. We ram evenly. We heat the oven to 180 degrees Celsius and put in it a baking dish. Bake for 10-12 minutes.
- Wash one lemon thoroughly and rub the zest on a fine grater. For the filling, mix 700 grams of cream cheese, 200 grams of granulated sugar, 2 grams of salt, zest of one lemon, five chicken eggs and 250 grams of sour cream. It is important that all ingredients have room temperature.
- Mix all the ingredients with a whisk or mixer at low speed. A homogeneous mass should be obtained.
- When the sand base is ready and cooled, we spread the cheese mass on it with an even layer.
- We set the oven at 150 degrees Celsius and put our cheesecake in it for 55 minutes. When the baking is ready, turn off the oven and leave the dish in it to cool for at least an hour.
- After the time has passed, with a knife, separate the cheesecake from the sides of the detachable shape, remove the sides and again leave it to stand until it cools completely. We cover the dessert with cling film or a special lid for cakes and put it in the refrigerator for the night. Thanks to this, our cheesecake will have a smooth and beautiful surface.
- Before serving, decorate the dessert with fresh berries.
Decoration methods and serving options
- The simplest and most refined cheesecake decoration is fresh berries. To do this, take any berries, wash them, dry and put on top of the pie. For this, strawberries, blueberries, currants are perfect. It is important that the fruits are ripe, whole and fresh. Complete the serving with a sprig of mint and powdered sugar.
- You can also decorate your pastries with cocoa powder or instant coffee. To make it beautiful and unusual, cut out some figures (stars, hearts, etc.) on a circle of parchment paper. Then place this stencil on the surface of the cheesecake and sprinkle through a sieve. Then carefully remove the stencil.
- If your baking is chocolate, you can use white chocolate chips.
- You can cover the cheesecake with icing, this will give the dessert sophistication and taste. To prepare the glaze, you need to melt the butter in a saucepan, add sugar, cocoa powder and milk, bring to a boil. Pour the finished cheesecake with this mixture and leave to cool.
- If you have time, you can cover the cheesecake with jelly. Just pour the prepared jelly powder with some water and leave for 15 minutes. When the jelly has cooled, fill them with the top of the pie. It is important that your cheesecake remains in a baking dish with high sides.
- Despite the fact that there are a lot of ways to decorate, do not overdo it in this regard. After all, cheesecake involves minimalism and a perfect surface.
