Step cooking
- First you need to prepare the base of the cheesecake. To do this, grind 500 g of cookies in a blender or with a meat grinder until small crumbs. Pour the crumbs into a deep bowl.
- Cut 200 g of softened butter into small pieces, pour into a saucepan and send to the stove so that it melts to a liquid state.
- Pour melted butter into a bowl with crumbs and mix with a spoon until smooth.
- Put the resulting mixture into a baking dish and evenly distribute. If desired, you can cover the form with parchment paper. Using a tablespoon, compact the mass well and make a side approximately 1 cm high. You can press the side firmly against the side of the mold with your hands.
- Send the form to the refrigerator for 30 minutes.
- Meanwhile, cook the curd mass. Pour 500 g of cottage cheese into a bowl, add 2 eggs to it and beat well with a mixer.
- Then add about 6 tbsp. l sugar and about 200 g of cream.
- Mix everything with a mixer until smooth.
- Add 8 g of vanilla sugar to the resulting mass. Remove the zest from one lemon and also add to the bowl to all the ingredients. Mix everything well with a spatula.
- When the base of the cookie in the form is already frozen, you can safely spread the curd mass on top of the base.
- Evenly distribute the mass in the form and send the cheesecake into the oven preheated to 170 ºС for 50 minutes.
- In the meantime, prepare the cream. Pour 200 g of sour cream into a deep bowl and add 2-3 tbsp. l sugar, mix well with a mixer.
- After 50 minutes, remove the cheesecake from the oven, pour sour cream on top of it, evenly distribute and send back to bake for another 10 minutes.
- When ready, take the cheesecake out of the oven. To separate it from the mold, walk with a knife from the inside along the edge of the mold and leave at room temperature until it cools completely. Then send the dessert plate to the refrigerator for about 8 hours. After this time, remove the cheesecake from the mold and enjoy its delicate taste.
If you want to make your dessert even sweeter or more beautiful, pour it with strawberry or raspberry jam. There are a lot of decoration options. You can use various confectionery powders and powders, spread fruit slices on top, sprinkle with nuts, and glaze - as your soul desires.
