Shortbread | 200-220 g |
Butter | 100 g |
Cottage cheese | 250 g |
Sour cream | 250 g |
Sugar | 4 tbsp. l |
Gelatin | 25 g |
Orange juice | 150 ml |
Orange | 1 PC. |
Water | 100 +140 ml |
Step cooking
- Cheesecake preparation begins by soaking 25 g of gelatin in 100 ml of water. Stir the ingredients thoroughly with a teaspoon and set aside until the gelatin is completely dissolved.
- We place 200-220 g of shortbread cookies in a blender bowl and grind it into crumbs. If there is no blender, then we shift the cookies into a bag, tightly close and chop it with a rolling pin. Pour the finished crumbs into a deep bowl.
- Melt 100 g of butter. This can be done in a water bath, but it is easier to transfer the oil to a deep bowl and put in the microwave for several minutes. Add melted butter to a bowl with crushed cookies, mixing thoroughly until smooth.
- Pour cookies into a round shape and ram around the entire perimeter. It is better to use a detachable form, since it will be easier to remove the finished cheesecake from it. If this is not the case, then we use the usual one, but we cover the bottom and its walls with a plastic bag or cling film to make it easier to get the finished dish.
- We cover the form with the finished cake with cling film and remove for a few minutes in the refrigerator.
- We proceed to the preparation of 250 g of cottage cheese. It is necessary to grind it with a hand blender or use a sieve.
- When the curd acquires a creamy consistency, add 250 g of sour cream and 4 tbsp. l Sahara. All products are mixed well with a spatula.
- Pour 140 ml of hot water into a deep plate and dissolve 2/3 of the swollen gelatin. The liquid should be hot, but in no case boiling water. Stir the ingredients thoroughly so that no lumps form. Combine the dissolved gelatin with cottage cheese and sour cream, mixing well. From the refrigerator we take out the cake pan and pour the cottage cheese mousse on top. We again cover the form with cling film and put in the refrigerator for 1.5-2 hours.
- We proceed to the preparation of the next layer of cheesecake. Cut the orange into thin rings, remove the peel and cut it in half. If you do not like orange, then it can be replaced with cherries, apricots, bananas and other fruits to your taste.
- Heat in a microwave 150 ml of orange or any other juice of your choice. The juice must be hot so that the rest of the gelatin dissolves in it. Mix the juice with gelatin and stir until all the lumps have dissolved.
- When the curd layer hardens, we take out the cheesecake from the refrigerator and spread the chopped orange on top of it.
- Using a tablespoon, carefully pour oranges with juice with gelatin. You cannot immediately pour all the juice, since oranges are more likely to float to the surface.
- Cover with a film of cheesecake and send to the refrigerator for 2 hours. After cooking, we take out the cheesecake from the refrigerator and hold it around the edges with a long thin knife to separate the dessert from the sides and easily get it. At the end, remove the split ring.
- Cut the finished cheesecake into portions and serve for tea.
