Step cooking
- Prepare the minced meat for future cutlets. To do this, rinse and pass 700 g of beef through a meat grinder.
- Peel 1 white onion and pass through the meat grinder to the meat.
- Next, add 50 ml of water, 1 tsp. salt, 1 tsp black pepper and 2 tsp. dried fried onions.
- Stir the minced meat until smooth. Next, take the minced meat in your hands with effort, throw it to the bottom of the container, repeat it several times, this will give the patties juiciness. Leave the minced meat for 15-20 minutes, covering it with cling film or a lid.
- Form 7 equal balls from the minced meat. Sift 100 g of flour onto the surface, sprinkle the meat balls with flour and give them a flat, round shape.
- In a pan, heat 50 g of vegetable oil, put the patties.
- From a baking paper, cut a circle the diameter of which is equal to the diameter of your pan. Cover the patties on top with a cut circle. Place a saucepan on cutlets covered with paper. The weight of the pan should not be too large, it should not allow the patties to rise, but not flatten them.
- Fry the patties on both sides until golden brown.
- Prepare the sauce for serving. Peel 1 small purple onion and cut into a very small cube.
- Finely chop 2 pickled cucumbers.
- Mix cucumbers with onions, add 1 tsp. dried fried onions, 1 tbsp. l mayonnaise, 1 tbsp. l mustard and 2 tbsp. l ketchup.
- Take the black buns and cut them horizontally into two using a bread knife. Heat a dry frying pan and lay the halves of the buns with the cut down. Dry the buns until golden and crispy.
- On the bottom of the bun, lay 1 tbsp. l sauce, lettuce on it and again a little sauce.
- Next, put the cutlet.
