Ingredients

Milk 30-50 g
Frozen or Fresh Blueberries 300 g
Sugar 50 g
Rosemary 1 sprig
Cream 280 g
Cream cheese 350 g
Sour cream or natural yogurt 200 g
Powdered sugar 80 g
Gelatin 20 g

Step cooking

  1. Break 160 grams of shortbread cookies into pieces and beat with a blender until small crumbs.
    Grind shortbread cookies into crumbs.
  2. Mix in a bowl crumbs of cookies with 30-50 grams of milk until a homogeneous mass. Knead first with a spoon, then with your hands.
    Add milk to the crumbs of cookies and knead this mass.
  3. Put crumbs in the prepared form on parchment paper and evenly distribute them in the form. Refrigerate for 10-15 minutes.
    We spread the resulting mass in a baking dish.
  4. Cooking cream should begin with the creation of blueberry syrup. To do this, in a stewpan mix 300 grams of frozen blueberries with a small amount of water (half a glass), add 50 grams of sugar and put a sprig of rosemary on top.
    We combine blueberries, water and gelatin in a saucepan, add a sprig of rosemary.
  5. Cook blueberries with sugar and rosemary over medium heat for 10-15 minutes.
    Cook blueberry mass.
  6. While blueberries are boiling, you need to whip 280 grams of cream with a mixer at the highest speed until the mass is thickened.

  7. In a separate bowl with a mixer, beat 350 grams of cream cheese and 80 grams of powdered sugar.

  8. Then add 200 grams of sour cream or natural yogurt and whisk again until smooth.

  9. Soak 20 grams of gelatin in cold water. Mix well.
    Dissolve gelatin in water.
  10. When the blueberry syrup is ready, remove it from the heat, take out a sprig of rosemary and add a small amount of syrup (about 1 tablespoon) in a glass with gelatin. Mix everything well.
    Add a little blueberry syrup to the gelatin mass.
  11. Mixed gelatin with syrup should be added to a bowl with cream cheese and sour cream. Mix well until smooth.
    Add the blueberry mass with gelatin to the cream cheese mass.
  12. Then add whipped cream and mix well again.
    Now add whipped cream to the blueberry mass.
  13. When the cream is ready, remove the cake from the refrigerator and put the creamy mass on it. It is good to distribute blueberry cream on the surface of the cake with a spatula or spoon.
    We spread the creamy mass in a baking dish.
  14. Then garnish the cheesecake with the blueberry syrup prepared previously. It is important that the syrup is cooled.
    Align the blueberry jelly on the surface of the future cheesecake and send the dessert to the refrigerator.
  15. Send the cheesecake to the refrigerator for a few hours, or better leave it to cool until morning. Ready cheesecake can also be garnished with fresh blueberries.
