Step cooking
Cooking lentils
- Place 1 cup lentils in the pan.
- Salt it to taste and add 1 tablespoon of vegetable oil.
- Pour the lentils with two glasses of boiling water and mix.
- Place the lentils on a slow fire. Cook until tender, until the lentils are soft, but at the same time retain their shape. Stir occasionally. Do not cover the pan with a lid. If after cooking not all the liquid is absorbed into the lentils, it can be drained.
Vegetable preparation
- Peel 1 small onion and cut into small cubes.
- Grind 1 small carrot on a coarse grater, having washed and cleaned it beforehand.
- If you take wild mushrooms, then boil them before you start cooking. If you chose champignons or oyster mushrooms for the dish, then you do not need to cook them. It is enough to wash and clean such mushrooms. Cut 250 grams of pre-prepared mushrooms into slices. Mushrooms should not be finely chopped, as they will retain their juiciness after roasting.
Roasting
- Heat vegetable oil in a frying pan, fry onions and carrots until golden brown and soft (2-3 minutes).
- Add mushrooms to the pan to vegetables. Salt and pepper to taste, add your favorite spices (for piquancy, you can add garlic to mushrooms). Fry until mushrooms are cooked (5-8 minutes).
- Add boiled lentils to the mushrooms in a pan.
- Mix well. The dish is ready. Enjoy your meal!

Serve warm with fresh vegetables or salads. It can be stored in the refrigerator without any problems and heated before serving. You can decorate lentils with mushrooms with finely chopped greens: dill or parsley.
