Step cooking
- First you need to separate the yolks from the proteins. Take a deep plate and a bowl, carefully divide 3 eggs into protein and yolk. Do not rush to throw proteins, you can make delicious meringues from them.
- In a bowl with yolks, add ½ tsp. salt and ½ tsp sugar, and then carefully move the mixture with a whisk until the salt and sugar dissolve in the yolks, and the mass becomes homogeneous. 200-250 g of wheat flour should be sifted through a sieve into a separate bowl so that it is enriched with oxygen.
- Pour the mass of yolk, salt and sugar into the flour, and then mix the dough. In order to knead it well, sprinkle a little tabletop with flour and knead the dough directly on the table. By consistency, it should turn out as tight as dumplings. The approximate kneading time should be about 5 minutes.
- After you knead the dough, you need to give it a rest. Wrap it in a plastic bag or cling film and leave it alone for 20-30 minutes. Now you can start rolling. Again, sprinkle a little flour on the table, put the dough on it and divide it into 2 parts, so it will be more convenient to roll it. Using a rolling pin, roll out a 1-2 mm thick layer, cut the excess around the edges to make a rectangle.
- Then this rectangle should be cut into long strips with a width of 3 cm, and then cut these strips into strips.
- When all the dough has been cut into strips, take a deep frying pan or stewpan, pour vegetable oil into it and warm it well.
- In order to check how well the pan is warmed up, you can dip one straw into oil. If it starts to boil instantly, it means that you can start to fry the dough in small portions for 1 minute (it should be a little baked), stirring constantly. You need to get the fried dough out of the pan with a slotted spoon, laying it on a paper towel to get rid of excess fat.
- Now let's start cooking the syrup. Mix 50 g of sugar in a saucepan with a thick bottom with 150 g of honey and put on fire. The mixture should be constantly stirred to help the sugar dissolve. Bring it to a boil, then hold it on fire for another 1 minute, stirring constantly, and then remove.
- Then pour hot straw into the straws and gently mix it so as not to damage. Take a large dish and with your hands moistened in cold water, start forming a chuck-chuck until the syrup has frozen, building a small slide. Grind the walnuts with a blender or rolling pin and lightly sprinkle the chuck-chuck on top. Put the cooked dish in the refrigerator for several hours to set.
- Serve the dish with tea or coffee.
