Step cooking
- Pour 200 ml of kefir into a bowl. Add 2 tbsp. l sugar, 1/2 tsp salt, 1 egg and 1 tbsp. a spoonful of refined sunflower oil. Stir thoroughly until salt and sugar are completely dissolved.
- Pour 350 g of wheat flour into a mixing bowl. Before starting cooking, it must be sieved.
- Add 1/4 tsp to flour soda. With soda, you need to be extremely careful, otherwise, if you go too far with it, the taste and smell of soda will be clearly felt in the cooled pies. For such an amount of flour, 3 g of soda is enough. According to the measuring table, in a teaspoon with a slide of 12 g, so we add 1/4 tsp. Mix the soda thoroughly with flour. If you knead the dough, and you still have the taste and smell of soda, then next time add a little less soda.
- Pour kefir with sugar and salt to flour and knead the dough. The dough should turn out very soft, so that when forming pies, you can do without rolling pin. It is also worth considering that flour can be of different quality, and may have different properties. If you feel that the dough is very dense, you can add 1-2 tbsp. l kefir. Conversely, if the dough is very soft, you can add 1-2 tbsp. l flour. Knead the dough very quickly so that the soda does not lose its properties.
- When it is already inconvenient to knead the dough with a spatula or spoon, begin to knead with your hands. At the end of the batch, add another 1 tbsp. l refined vegetable oil to collect all the crumbs in a single com. After that, the dough will become a little softer. Until butter enters the dough, continue to knead in a bowl. After that, you can go to the tabletop surface sprinkled with flour or a silicone baking mat. You need to knead until the dough stops sticking to your hands. Although sometimes some stickiness still remains. It is not necessary to hammer the dough with flour, otherwise the pies will turn out to be tough and "rubber".
But if it’s more convenient for you to chop the dough on flour, sprinkle the surface of the table or silicone mat with a very small amount of flour, less than 1 tbsp. l., and knead 1-2 minutes so that the flour covers the dough, and it does not stick to your hands. A lot of flour is not necessary to interfere. So the dough will remain soft, but it will be easier to work with.
