Step cooking
- Pour cold water (0.5 liters) into a large bowl. Water temperature should be slightly below room temperature. Add live pressed yeast (13 grams) or dry yeast (4-5 grams) to the water and completely dissolve them in water.
- Pour salt (30-50 grams) into a bowl and dissolve it completely in water, stirring occasionally.
- When the salt has dissolved, pour in a thin stream, constantly stirring, olive oil (120 ml). Mix the whole mass well.
- Sift flour (1 kg) into a large bowl with a slide, and then make a depression in the slide. Pour the liquid ingredients into the flour in parts, gradually kneading the dough with a wooden spoon or spatula.
- When the dough becomes thick, set aside a spoon, dust the table surface with flour and put the dough from a bowl on a work surface. Knead the dough with your hands, dusting the table with flour. The dough should gather in a smooth elastic ball. In time it takes about 15 minutes of intensive kneading.
- When the dough is formed into a smooth ball, hit it several times on the table surface so that excess air comes out, and leave the dough for 2-3 minutes. A bowl in which the dough will be placed, grease with olive oil.
- After rolling the dough into a large oval sausage, cut it with a knife into portions. Typically, for a medium-sized pizza, a dough of about 150 grams from this inventory is enough.
- Divide the dough into portions. Roll each serving into a bowl and put in a bowl greased with olive oil. Cover the prepared dough with a clean, dry towel, and put in a warm place for 2.5-3 hours.
- After the time has passed, use the suitable dough to form and bake pizza.
