- Add milk heated to a temperature of 25-35 degrees. Mix a little. Then we pour in half of warm water (25-35 degrees), again we mix a little. Pour olive oil into the dough, mix. Top up the remaining water as needed, mix a little. We begin to knead the dough with your hands in a bowl.
- When the flour is combined into a more or less whole dough, transfer it to the table. We continue to knead the dough with your hands, periodically sprinkling the working surface with flour. Gradually, the dough will cease to stick to your hands. You need to watch so as not to hammer it with flour. Dusting during kneading should take no more than 2-3 tablespoons of flour.
- After 10-15 minutes of kneading, the dough will cease to stick to your hands and become more malleable. At this stage, we form from it a semblance of a ball and put it in a greased bowl. We cover with cling film, in which we make 2-3 holes. You can also cover with a damp towel. We remove the dough for fermentation in a warm place for 40 minutes. This process should occur at a temperature of 35-40 degrees.
- When the dough has come up, we do the first wake in order to saturate it with a fresh dose of oxygen. This is necessary for the growth of yeast. After kneading, we again form the dough in the shape of a ball, send it into a bowl and cover from above, as for the first time. Sent to a warm place for 40 minutes.
- After that, the dough becomes even more magnificent. We make the final wrap, knead a little and divide the dough into portioned slices. For example, we divide our dough into three equal pieces of 260 g.
- We shift each piece into a separate bowl and let rise. Further it can be used for its intended purpose. From this test, you can cook both thin and lush base. For thin roll out the dough 1-2 mm, lay out the filling and bake immediately. For a lush base, roll out the dough a little thicker (4-5 mm), give a little rest, so that it rises.
