Step cooking
- We take 1-1.5 kilograms of fresh eggplant, thoroughly rinse them under water and clear the stalks. Next, cut the prepared eggplant into pieces with a width of 1.5-2 centimeters, and then cut into cubes. If desired, the peel from the eggplant can be removed.
- Turn on the gas or electric stove, put on it a pan half full of water and add 2 tablespoons of salt with a slide. Mix thoroughly.
- Bring water to a boil over medium heat, pour 150 milliliters of 9% vinegar.
- Stir and immediately pour the previously sliced eggplant. Cook for about 5-6 minutes until cooked. Ready-made eggplants acquire a slightly transparent appearance, become slightly soft. It is very important not to digest the eggplant so that it does not fall apart in the salad.
- Discard the finished eggplant in a colander and leave it for 15-20 minutes so that the marinade is completely stacked.
- We take 1 medium head of garlic, peel it and finely chop the garlic on a cutting board. We put eggplant from a colander in a plate and put chopped garlic on top.
- Next, take 1 bunch of fresh dill, rinse it under water and also finely chop on a cutting board. Add to the plate to the eggplant and garlic.
- Pour 100 milliliters of vegetable oil into a plate of eggplant and mix the salad thoroughly with a regular kitchen spoon.
- We cover the salad with a plate, let it cool and send it to the fridge for 12 hours.
- The salad is ready, you can serve it to the table! If desired, before serving, you can add 1 tablespoon of sugar to the salad. Enjoy your meal!
How to choose eggplant
- The eggplant, which was recently plucked from the garden, is quite weighty. The average fruit weighs about 500 grams.
- Eggplant must have an unshriveled green stem. If it was cut, then it is better to refuse the purchase: most likely the eggplant is already old.
- Before buying, be sure to push on the eggplant, if it quickly regained shape - feel free to buy.
- No need to buy too large fruits, most likely they were greatly fertilized and unnecessary nitrates accumulated in them.
- If you cut the eggplant, and its seeds are dark in color or it exudes an unpleasant odor - it is better to throw it away.
