Step cooking
- First of all, we need to peel 10-12 cloves of garlic and 1/3 of the medium carrot. Cut the carrots into large strips. For this recipe, we need 1 kg of pork pulp. Optionally, you can use veal, lamb, etc. Wash the meat thoroughly and pat it with paper towels to absorb excess moisture. Next, we make deep cuts on top at a distance of about 1-1.5 cm from each other. It is advisable to make incisions in a checkerboard pattern.
- Then the meat must be well salted. Do not forget to add salt to the inside of the incisions.
- Pepper also on all sides and inside the incisions.
- Carefully coat the meat with ordinary mustard. Squeeze a drop into each incision. Mustard contributes to the rapid pickling of meat, and boiled pork will turn out soft and tender. Special carefully lubricate the top.
- Lubricate meat with mayonnaise in the same way. Do not forget to process the walls inside the holes.
- In each hole we put 1 clove of garlic. After that, we lay in each cut slices of carrots.
- We carefully try to close the holes, while rubbing the mustard and mayonnaise already applied earlier. From above, grease the meat with French mustard, generously sprinkle with black ground pepper and peppercorns. We also lay out 1-3 bay leaves. Leave the meat to marinate for 2-3 hours. If the room is hot enough, you need to cover the meat with a bowl and refrigerate.
- We line the baking dish or baking sheet with a sufficiently large piece of foil. Gently transfer the pickled meat to the foil and add 1/3 stack. ordinary clean water. Carefully wrap the meat in foil.
- Preheat the oven to 180 degrees. Put the form or baking sheet with meat in a preheated oven and bake for about 1 hour. Cooking time depends on the amount of meat. It must be calculated in the ratio of 1 hour per 1 kg of meat, and also take into account the power and characteristics of each specific oven. 15-20 minutes before the end of baking, you need to unfold the foil so that the meat is browned.
