Step cooking
Dough
- Sift 450 g of premium wheat flour into a deep bowl and add 7 g of high-speed dry yeast to it. Mix the dry ingredients.
- Melt 40 g of butter in a microwave or in a water bath and combine it with 250 ml of warm milk, 1 chicken egg, 2.5 tbsp. l sugar and ½ tsp salt. Mix everything thoroughly so that the ingredients are combined into a homogeneous mass and salt and sugar are completely dissolved.
- Pour the liquid mixture into the flour and knead the dough.
- This can be done both manually and with the help of a food processor with a special mode. You need to knead the dough long enough - 5-7 minutes, so that it becomes very soft, airy and does not stick to your hands.
- We collect the dough in a lump, put it in a bowl, which we cover with cling film or a towel, and leave the dough to rise for 1.5 hours.
- After this time, we take out the risen dough and knead it for another 3-4 minutes, so that it is saturated with oxygen longer and becomes even more malleable for modeling.
- So that the buns were the same in size and degree of readiness, we measure the same portioned pieces using a kitchen scale: from this volume of dough, they will turn out 12-13 pieces.
Filling
- Melt 50 g of butter in a microwave or in a water bath - we will lubricate them with them.
- Stuffing No. 1: 1.5 tbsp. l sugar combined with 2.5 tbsp. l coconut flakes and mix thoroughly.
- Stuffing No. 2: we take in equal amounts (here 3 tbsp. L.) Sugar and confectionery poppy and also mix. Stuffing No. 3 will consist only of sugar and butter. It will need about 2 tbsp. l
Buns
- Each of the portioned dough pieces is rolled into a pancake with a thickness of 3-5 mm. Top with a culinary brush, cover them with melted butter.
- Place 2-3 tsp in the center of the workpiece. any of the fillings and spread it in a uniform layer along the plane of the bun.
- We turn the workpiece into a roll, reduce and pinch its edges.
- Now we turn it on its side and make a longitudinal section in the test, without touching the extreme 2-3 cm.
- Expand the cut halves and get the desired shape of the heart.
- We spread future buns on a baking sheet covered with parchment paper. We cover them on top with cling film or polyethylene and give a rest and rise for half an hour.
- Add 2 tbsp to chicken yolk. l warm milk and mix the ingredients until smooth. Lubricate the buns with the mixture before placing them in the oven.
- Preheat the oven to 190ºС. We bake rolls for 15-20 minutes, and their readiness is checked using a wooden skewer.
- Remove the finished buns from the pan and let them cool. We decorate them with sweet icing, grated or melted chocolate, nuts, candied fruits, coconut flakes or confectionery powder. Serve with tea, milk, juice or any other drink.
