Step cooking
Cooking dough
- Place 250 milliliters of kefir in a bowl of warm water. It should warm up to 35-37 degrees. After that, add 2 tablespoons of sugar and 1 teaspoon (5-6 grams) of quick-acting yeast to kefir. Stir thoroughly until the yeast dissolves.
- Break 2 eggs, 50 grams of soft butter and 1 teaspoon of vanilla sugar into a bowl. Stir until smooth using a mixer or whisk.
- Sift 500 grams of flour into a separate bowl. Sifting it is mandatory so that the dough is lush and airy. Add a pinch of salt to it. When the yeast with kefir infuses for 7-10 minutes, pour them into the egg-oil mixture. Stir until smooth. Begin by parts to introduce flour to liquid in 3-4 doses. Add part of the flour and mix. Repeat this until the flour is over. At this stage, you should not pursue the goal of getting rid of lumps in the test. You just need to combine the dry and liquid base.
- Start kneading the dough with your hands in the bowl. Sprinkle a small amount of flour on the kitchen board and transfer the dough there, form a ball out of it. Do not knead vigorously to leave it airy.
- Transfer the dough back into the bowl for 30 minutes. Cover it with a towel and place it in a warm place without drafts.
Cooking toppings
- Peel and peel apples. Cut them into small cubes.
- Put 30 grams of butter in a preheated skillet. To the butter heated in the pan, send chopped apples, sprinkle them with 2-3 tablespoons of sugar (depending on the sweetness of the apples). Fry for 3 minutes, stirring. Sugar must dissolve and caramelize apples. If you like cinnamon or some other spices, then add them to the filling to taste
Buns
- Pour the rest of the flour onto the board, put the dough on it. Knead it lightly and place it back in a bowl under a towel in a warm place for 30 minutes. When the dough finally comes up, lay it on the board. It should be soft and airy.
- Form a sausage from the dough and divide it into 4 parts for convenience. Divide the small part of the dough into several parts, depending on what size buns you want. Lubricate your hands with vegetable oil - this way the dough will not stick. Form a small cake from the dough and put 1 tablespoon of the filling on it. Gather up all the edges of the dough, covering the filling.
Baking
- Put the finished buns on a baking sheet covered with parchment. The paper can be greased with vegetable oil. Leave 4-5 centimeters between each bun so that they do not stick together when they increase in size.
- Cover the buns formed on the baking sheet with a towel and leave for 20 minutes.After the buns rise a little more, beat 1 egg in a small plate and beat it well. Lubricate the rolls with a silicone brush. You can also sprinkle them with sesame seeds on top.
- Send the buns to the oven preheated to 180 degrees for 20-25 minutes. Check their readiness from time to time. The dough should bake and a golden crust should form on the buns.
- Remove the finished buns from the oven and grease each with a little butter. Leave them to cool for 15-20 minutes.
