Step cooking
Dough
- First you need to prepare the dough for buns. To do this, slightly warm 180 ml of milk, it should be warm, but not hot. To milk, add 1 tbsp. l granulated sugar and 7 g dry yeast, then mix. Dry yeast can be replaced with pressed yeast, their weight should be 25 g. This milk-yeast mixture should be put in a warm place for 15-20 minutes.
- Melt 100 g butter and let it cool slightly. While the dough is infused, separate the 3 yolks and place them in a deep bowl. Add 100 g of sugar to the yolks, a pinch of salt and 1 tsp. vanilla extract, mix everything with a mixer.
- Continuing to beat the mixture, add 100 g of melted butter and zest of one lemon to the yolks and sugar (you can use dried). Now you can get the brewed yeast, they should form a lush foam, if this did not happen, then it is better to make a new dough, otherwise the buns may not rise.
- Add 400-450 g sifted wheat flour to the yolks and butter, and pour the dough on top. Knead the dough for 10 minutes using a mixer with hook nozzles. If there are no such nozzles, then kneading can be done manually. The dough should be dense enough and not stick to your hands. Lubricate a deep bowl with a little vegetable oil and put the dough in it for 1 hour to make it fit. Do not forget to cover the bowl, otherwise the dough will wind up.
Curd Filling
- While the dough is suitable, you can begin to prepare the curd filling. First, beat with a fork 1 egg. Put 300 g of cottage cheese in a separate plate, add 100 g of sugar to it, 1 tsp. vanilla extract, zest of one orange and 3-4 tablespoons of beaten egg (the rest is useful for greasing buns). Kill all ingredients with a submersible blender.
- Add 80 g of chopped toasted almonds to the curd mass, it can also be replaced with walnuts, raisins or dried apricots. Put the filling in the refrigerator and wait until the dough comes up.
Buns
- Remove the dough from the bowl and knead it a little, then divide it into 12 equal parts, rolled into balls. Next, roll the balls into circles with a diameter of 15 cm. Make 4 cuts in the form of a cross, not reaching the middle.
- Put a small curd ball in the middle of the rolled dough, and then cover it with “petals” one by one, making a rose and pinching the edges well.
- Put all the buns on a baking sheet covered with parchment. Cover the buns with a towel and let them go a little further. Then grease the pastry with the egg and put it in the oven, preheated by 190 degrees, for 20-25 minutes.
- Take out the finished buns, put them to cool on a wire rack, and then sprinkle with powdered sugar.
