Step cooking
- Sift 0.55 kg of flour into a bowl.
- Add 30 g of milk powder or cream. This ingredient is optional, if not available - no need to be replaced. It just gives a special delicate fragrant note.
- Pour 50 g of sugar. We also add vanilla sugar in an amount of 10 g.
- Pour 280 ml of warm milk, its temperature should be 38-40ºС.
- Then spread 25 g of live yeast. If dry yeast is available, take 11-12 g.
- Knead the dough a little with a dough mixer or manually so that the flour absorbs milk.
- Add 8 g of salt.
- Break the egg into the mixture.
- We spread 100 g of butter - it should be soft, so you should take care and remove it from the refrigerator in advance.
- Knead elastic and soft dough, it should not stick to your hands. If this is done with a machine, it will take 10-12 minutes at medium speed, the dough will lag behind the walls of the bowl.
- We form the dough into a ball and put it in a bowl (it is advisable to grease its walls with vegetable oil). We cover with a film and put in a warm place so that the dough rises, it takes up to 2 hours. You can use the multicooker - in the "Multi-cook" mode at 30ºС. The dough can rise in an hour - you need to check it periodically.
- Raised the dough, turning the bowl over, put it on the table and gently crush it.
- We divide the dough into 12 equal parts (each weighs about 90 g).
- Roll up the balls. Leave them for 10 minutes, covering with a film.
- From balls we roll oval cakes.
- On each cake we put a strip of filling in the middle - it can be jam, chocolate paste or something else as you wish. It will take about 200 g of filling.
- Fold the cake in half and pinch along the edges (so that the filling does not leak out).
- Twist the roll - it turns out a rose.
- We grease the baking dish with butter and put roses in it at a distance from each other. Cover with foil and leave for proofing in a warm place - near the oven or heating battery - for 30-40 minutes.
- Visibly grown buns can be greased with milk (if you plan to sprinkle them after baking with powdered sugar) or a mixed egg.
- We heat the oven to 180ºС, set the form and bake for about half an hour. As soon as they are browned, they can be removed.
- If desired, finished roses can be greased with butter on top. When cool a little - sprinkle with powdered sugar.
