How to make dough
- Pour in a glass with a capacity of 600 ml 100 ml of drinking water and 150 ml of milk, heat the mixture on a stove in a saucepan or in a bowl in a microwave oven to a temperature of 35-38 ° С. Add 10 grams of granulated sugar and 6 grams of dried yeast to the glass. Stir the composition with a spoon until the dry ingredients dissolve. Leave to stand for about 10 minutes. If the yeast is good, then after this time a foam cap forms on the surface of the liquid.
- Sift 350-400 grams of premium wheat flour into a deep bowl. Separate 50 grams from the total by putting them in another bowl. In the center of the flour hill, make a recess, pour the matching dough into it.
- Hand knead the dough in a bowl. When the flour has absorbed all the liquid, add 30 grams of pre-melted butter.
- Transfer the dough to the countertop, knead it with your hands for 10-15 minutes. The longer you knead the dough, the less the smell of yeast will be noticeable and the buns will be tastier. If the dough sticks to the work surface, remove it with a cooking spatula. Well-kneaded dough becomes plastic, and does not stick to either the hands or the countertop.
- Lubricate the bottom and sides of the bowl with vegetable oil (10 ml), put the dough knocked into a bowl in a bowl. Tighten the bowl with cling film, leave the dough to proof for 35-40 minutes.
- Lubricate the countertop with vegetable oil (10 ml), transfer the rested dough onto it. With your hands, stretch the dough in different directions into a square with a side of about 40-45 cm. Fold the dough in half, then again in half. Fold the resulting roller three times. Transfer the resulting puff pastry into a bowl, tighten with cling film, leave for 35-40 minutes to make the dough fit again.
Cutting dough, forming and baking buns
- Warm up the dough, make a roller out of it. Divide the dough into two parts, divide each part into another three equal parts. To ensure that the dough pieces have the same weight, use a kitchen scale.
- Form a bun from each piece of dough, turning the edges of the piece inward.
- Roll the ball around the countertop, giving it a round shape. Cover the blanks with cling film, let them "rest 10 minutes."
- Cover 2 baking trays with parchment paper. Lightly grease parchment paper with vegetable oil (20 ml). Roll each piece of dough with the edges inward. Roll around the countertop so that the bun has a perfect round shape. Put on baking sheets.
- Press each bun slightly with the palm of your hand, giving them a more flat shape.
- Tighten the baking trays with buns with cling film, let stand and walk for 40 minutes. While the rolls are suitable, preheat the oven to a temperature of 190 ° C.
- Divide 1 chicken egg into yolk and protein. Stir the yolk in a cup with a fork. Add 20 ml of milk, stir until smooth. With a culinary brush, grease the surface of the buns with egg-milk mixture.
- Sprinkle the greased buns with white sesame seeds (15 grams).
