- Add the flour in parts and knead the dough.
- Lastly, pour 35 ml of odorless vegetable oil. Knead the dough on the working surface for about 7 minutes until smooth. The dough is very docile, soft and elastic. We collect the dough in a bowl, put in a bowl, cover with cling film and leave for 1 hour to proof.
- While the dough is coming, we’ll make the shtreyselny crumb. To do this, in a bowl, mix 20 g of flour and 20 g of sugar. Then add 10 g of cold butter, grind until crumbs are formed. Put it in the refrigerator.
- The dough needs to be divided into 8 pieces. You can do this by eye, or you can use a kitchen scale to make each piece of dough the same size. Round each piece and leave to rest for 20 minutes. To prevent the dough from weathering, cover it with cling film.
- To make a flower out of dough, use a stack. Its bottom should be greased with vegetable oil so that it does not stick to the dough. Put the stack in the middle of the circle and squeeze into the dough. Holding the stack, with a knife we make cuts in a circle of dough, about 7 - 8 pieces.
- Hand form the petals and remove the stack. Thus, we make flowers from all the balls of dough.
- We shift the flowers onto a baking sheet covered with parchment paper, cover with cling film and leave to rest for 25 - 30 minutes.
- After the buns have come up, we press the middle again in a stack through the cling film. We put 1 tsp in this center. apricot jam. Choose jam or jam to your taste, the main thing is that it is not too liquid, otherwise it will leak and burn.
- Sprinkle jam on top with shredded crumbs, and grease the petals with an egg.
- We put the buns in a preheated oven to 180 degrees for 15 to 20 minutes. Ready buns cool and try.
