Step cooking
- Sift 3-4 tbsp into a large bowl. l wheat flour. To flour add 1 tbsp. l sugar and 250 ml of warm milk. Mix well and add 7 g dry yeast. Mix again, cover with a lid, cling film or a towel, and put in a warm place for 10-15 minutes. Beat 1 egg at this time and melt 50 ml of butter.
- After 10-15 minutes, the mixture should begin to foam, if this does not happen - the yeast is not active, and they should be replaced. Add 0.5 tsp. salt, beaten egg and warm melted butter, mix.
- Further sifting the flour, add it to the liquid mass in small parts. Depending on the quality, the flour may take more or less.
- When the dough becomes thick, and it will be difficult to knead with a spoon, transfer it to a board or table and then knead with your hands. The dough should turn out homogeneous, soft, not sticky to the hands, and it is good to keep the shape so that future buns do not spread when baking.
- Transfer the dough into a bowl, cover and put in a warm place for 20-30 minutes. When the dough is doubled, gently knead it and divide it into 8-10 parts, depending on the desired size of the buns.
- From each piece, form a ball, crushing the dough inward. If the dough sticks to your hands, grease them with a little vegetable oil. Cover the balls with cling film and leave for 5-10 minutes. Next, knead each bun, and rolling the dough on the table surface with your palm, give the balls an even, identical shape. Put balls on a baking sheet covered with baking paper or greased with vegetable oil. Leave small distances between buns so that they do not stick together when baking.
- Cover the formed buns with cling film so that the dough does not dry out and leave in a warm place for 30-60 minutes. You should not cover with a towel, as it will interfere with the rise.
- Meanwhile, in a small plate, beat 1 egg and 5 g of milk.
- When the balls of dough have risen well, grease them with the prepared mixture and sprinkle with sesame seeds. Preheat the oven to 180 degrees and place the pan in the oven for 15-20 minutes. After the buns are well browned, turn off the oven and let stand for another 5 minutes.
- Remove the bun pan, cover with a towel and let cool completely. You can store them in a paper bag.
Useful Tips
- You can sprinkle buns on top with caraway seeds, black sesame seeds, flaxseeds or poppy seeds.
- To make the dough fit faster, use the oven. To do this, warm it up to 40 degrees, turn it off and place the dough in it.
- You can use pressed yeast, for this recipe you will need 20 g.
