Step cooking
Make a dough
In one container we mix 150 ml of milk and 100 ml of bottled water, after which we heat them over low heat to 35-38 ° С. Add 10 g of sugar and 6 g of dry yeast to a warm liquid. Stir the mixture well, and then leave it in a warm place for 10 minutes.
Knead the dough
- In a bowl for kneading dough, sift 350 g of wheat flour of the highest grade. Add 6 g of salt there and stir everything thoroughly. In the center of the flour mixture we make a small depression, and then pour the dough into it.
- We mix all the ingredients with clean hands and begin to knead the dough. Once the dough has gathered in one lump, add 30 g of pre-softened butter to it. Knead the dough until it stops sticking to your hands and begins to lag behind the work surface. It is advisable not to add flour anymore, then the buns will turn out airy and tender. On average, it takes 10-13 minutes to knead the dough.
- We collect the finished dough in a round bowl, and then put it in a deep bowl, previously greased with a small amount of vegetable oil. Cover the bowl with cling film and send it to the microwave. There we put a glass filled with hot water. We close the device door and wait 30-35 minutes until the dough is doubled in size.
- Lightly grease the working surface with vegetable oil, and then put the dough on it. We stretch the dough in different directions with clean hands, forming a neat rectangle from it. Fold the rectangle several times, resulting in an equilateral square.
- The resulting square of the dough is returned to the bowl, again covered with cling film and sent to the microwave for another 30 minutes.
Bake buns
- We divide the dough into exactly six identical parts, each of which is rolled into a neat ball. We cover the formed blanks with cling film and leave it in this form for at least 10 minutes.
- We cover the baking sheet with baking paper, which, in turn, is slightly greased with butter or sunflower oil. Take one ball, crush it and re-form a round bun. We spread the product on a baking sheet. We do the same with the rest of the workpieces. Press the laid-out blanks slightly with your hand, making a kind of flattened flat cake. Cover the buns with cling film and leave them in a warm place for proofing for 40-50 minutes.
- Separately, beat one chicken yolk, and then add 10 ml of milk to it. Stir the ingredients and grease each bun with the resulting mixture. Then abundantly sprinkle each product with sesame seeds.
- We send the buns to an oven heated to a temperature of 190 ° С. We bake burgers for 15-20 minutes.We lay the finished products on the grill and allow them to cool completely.
