- Before starting to prepare a bowl, in which we will knead the dough, you need to pour hot water so that it becomes warm. It is necessary to get 1 chicken egg from the refrigerator in advance and put it in a glass of warm water for several minutes. Pour 120 ml of water and milk into the stewpan. We put it on the stove, including the middle fire. If there is no milk, for the preparation of buns we use only water in a volume of 240 ml. We heat the liquid to 37-38 degrees. If milk with water is very hot, then the dough will not work.
- Pour the slightly heated liquid into a warm bowl. Add 65 g of flour, which must be sifted through a sieve. Also, to the liquid ingredients, add 1 tbsp. l Sahara. All mix a little until the sugar is completely dissolved. After sugar is dissolved, add 7 g of dry yeast. Mix everything carefully, do not shake the mass with yeast. We cover the dish with a lid, towel or cling film and leave it to stand for 10-15 minutes in a warm place.
- After a quarter of an hour, the dough should be covered with a kind of cap with small bubbles. A similar reaction indicates a good quality yeast. Add 2 tbsp to the dough l sugar, 1 tsp. salt with a small slide and 1 warm egg. All mix a little.
- Sift 420 g of flour through a sieve and add to the total mass. We begin to knead the dough with a spoon. If you have a food processor or mixer, then you can use them to knead the dough as soon as possible.
- In a microwave or in a water bath, melt 40 g of butter and pour into the already kneaded dough. Repeatedly mix everything by hand, evenly distributing the oil throughout the mass. Cover the mixed dough with cling film and leave in a warm place for 20 minutes.
- After 20 minutes we take out a slightly suitable dough, put it on the table. The dough is sticky enough, but it is not necessary to sprinkle it with flour. Level the dough with your hands, giving it a rectangular shape. Divide the dough into 8 equal parts. If you like small burgers, then the dough can be divided into 10-12 smaller pieces.
- Knead each piece a little in the hands and roll it slightly on the table, giving it a spherical shape. Similarly repeat with each piece of dough. We lay out the blanks on the table, cover them with cling film and leave to stand for 10 minutes.
- After the time has passed, remove the film, and again knead each ball of dough in your hands and roll it a little into a ball. We do the same procedure with other pieces of dough and transfer the workpieces to a baking sheet covered with parchment paper. It is worth considering that during baking, the rolls significantly increase in size and can stick together, so the workpieces should be placed away from each other.Lightly cover the billets on the baking sheet with cling film, in no case tightening them tightly. This is required so that the buns can freely grow in size. On average, it takes 60 minutes to lift them.
- Preheat the oven to 180 degrees. In a separate bowl, mix 1 chicken egg with 15 ml of milk. All mix well. Gently grease each bun with the resulting mixture. You can do this with a silicone brush or finger. Sprinkle on top of each bun with a small amount of sesame. In total, it will take about 2-3 tsp. We put a baking sheet with buns in a preheated oven for 13-15 minutes at a temperature of 180 degrees.
- As soon as you notice that the top of the buns is browned, turn off the oven and leave the buns to stand for another 3-5 minutes. It is possible to slightly open the oven door. We take the finished buns out of the oven and cover them with a thin towel. This is required in order to make the crust soft. So that the rolls do not harden, they must be stored in a plastic bag. Burgers can be made from ready-made rolls.
