Step cooking
For convenience, the entire process was divided into two main stages. This will avoid confusion in the ingredients and possible mistakes in cooking, which is especially important in the work of beginning cooks.
Preparing the dough and baking pancakes
- Using a juicer, squeeze the juice from 300 g of fresh spinach. You can also use a blender or meat grinder. At the exit, you should get 200 ml of freshly squeezed juice.
- In a deep bowl or bowl, beat 2 eggs, add 1 tsp to them. sugar, 1 tsp. salt and mix the ingredients well with a whisk for whipping.
- Pour 40 ml of cream and 200 ml of spinach juice into the mixture.
- Sifting through a sieve, introduce 200 g of flour into the dough. Add it gradually, stirring with a whisk. So you prevent the formation of lumps, the dough will turn out smooth and uniform.
- Measure ½ tsp. baking powder and add it to the ingredients. At the final stage of preparation of the test, enter in it 2 tsp. vegetable oil. Stir the mixture and start cooking pancakes.
- Heat the pancake pan well on the hob. If one is not available, any frying pan with low sides will do. Use a ladle to pour the dough into it. It should not be too much, in which case, the pancakes will turn out to be thick. The dough should spread in a thin layer over the entire surface of the container.
- On medium heat, fry the pancake on one side, turn it over with a spatula and bring to readiness on the other side. It will take no more than 2 minutes to fry one pancake.
Cooking the filling and forming the dish
- Peel a medium-sized onion, cut into small cubes. Preheat the pan. Pour in it 2-3 tsp. vegetable oil. Transfer the chopped onion into a pan and fry until transparent.
- Mushrooms cut into medium-sized cubes, just need 100 g of champignons. Add them to the pan with onions, salt, pepper the filling to taste and fry it until tender. This will take you about 5-7 minutes.
- Once the mushrooms are well cooked, pour the remaining 100 g of cream into the pan. Mix the ingredients thoroughly. Fry the filling for a couple of minutes and remove from heat.
- Transfer the filling to a deep bowl. Once the filling has completely cooled, pour 100 g of cream cheese into it. Mix the ingredients until smooth and proceed to wrap the pancakes.
- One pancake will take you a little more than 2 tbsp. l creamy mushroom filling. Put it on a pancake and carefully wrap the edges. Thus, design all prepared pancakes.
