Step-by-step recipe for cooking pancakes stuffed with meat, with photo
To make it easier to understand, we will divide the cooking process into three stages. First, we will deal with the filling, then with the pancakes themselves, and then we will bring the dish to its logical conclusion through stuffing.
Pancake Meat Filling
- Take 700 g of beef tenderloin and cut into large pieces, approximately 50 g each.
- Heat a little vegetable oil in a pan and fry the pieces of meat until golden brown on all sides.
- Transfer the meat to a pan and pour 1.5-2 liters of boiling water. The water should be flush with the meat, because its amount depends on the pan you have chosen.
- Add some salt. Cover the pan, put on low heat and cook meat until cooked at a slow boil. For flavor, you can add bay leaf and a little allspice.
- Catch the meat from the broth and pass it through a meat grinder, strain the broth itself.
- Finely chop the medium onion weighing 130-150 g, fry it in a pan until golden.
- Then add 30 g butter and 30 g flour, sauté for a couple of minutes.
- Add the meat scrolled in a meat grinder, pour the strained broth and simmer the filling until thickened. If desired, add spices to your taste, try the filling on the salt, if necessary, add salt.
Dough and pancakes
- Pour 0.5 liters of milk into a deep bowl, beat 3 medium chicken eggs.
- Add 40 g of sugar, a little salt (about half a teaspoon), and sift 180 g of premium flour.
- Work the dough with a submersible blender until you get a uniform, smooth consistency. Ideally, it should be slightly thicker than drinking cream.
- Cover the dough (you can use a lid, a plate, or a simple cling film) and let it rest for 15-20 minutes. Then add 40 ml of vegetable oil, and mix well with a scoop.
- Pour the dough into a preheated pan, rolling it over the surface into a thin layer.
- As soon as the pancake "seizes", turn it over with a spatula to the other side for literally a couple of seconds.
- Put the finished pancake on a plate, repeat the procedure until the dough is over.
Stuffing
- For each pancake, lay out a tablespoon (with a confident slide) of the prepared filling.
- Wrap the pancakes with an envelope, laying them "seam" down. In this form, they can even be put in the freezer, making a blank for the future.
- Immediately before serving, frozen pancakes are recommended to be thawed and browned in a frying pan in a small amount of vegetable oil. Enjoy your meal!
