Step cooking
- First, we are preparing the liver. Pour about 1 liter of water into the pan and spread 500 g of chicken liver. We cover the pan with a lid and wait until the liquid boils. After boiling, cook for no more than 12-15 minutes. After the water boils, it must be salt, adding 1 tbsp to the pan. l table salt.
- While preparing the liver, we are preparing the test for pancakes. Pre-sift 320 g of wheat flour into a deep bowl.
- Add 2 chicken eggs and 1.5 cups of milk at room temperature to the flour. Add 1/2 Art. l salt, 5 tbsp. l vegetable oil.
- All mix well with a whisk.
- The dough is very thick, so dilute it with another 1.5 cups of warm milk. We continue to mix everything with a whisk until a homogeneous consistency. There should be no lumps in the test.
- At the end of the kneading, add 1/2 tsp. baking soda and mix everything. There is no need to extinguish soda with vinegar.
- Heat the pan over medium heat. We bake pancakes on one side only, pouring the dough into the pan with a ladle.
- It is necessary to grease a flat plate with butter, since we will spread the first pancake on it, turning it over with the non-baked side.
- After that, you need to grease all subsequent pancakes with butter. Doing this is necessary so that the pancakes do not turn out dry.
- Using a slotted spoon, we take out the finished liver from the pan and allow it to cool slightly.
- Cut into large cubes onions.
- Put 20-30 g of butter in a pan and let it melt a little over medium heat. Add the chopped onion to the pan to the melted butter. Fry it over medium heat for several minutes until transparent. We shift the onions into a plate so that it cools down a little.
- We rub the cooled chicken liver on a coarse grater.
- Fried onions are sent to a bowl with grated liver.
- Salt and pepper foods to taste. All mix well.
- We proceed to the wrapping of each pancake. We spread the pancake with the fried side up, we spread about 1 tbsp. l fillings and wrap a pancake.
- In a pan, melt 20-30 g of butter and spread wrapped pancakes with filling. Fry over medium heat for several minutes on each side.
- We spread the finished pancakes with chicken liver on a beautiful dish and serve with fresh sour cream.
