Step cooking
Knead the dough
- 200 g of boiled or baked pumpkin is cut into small pieces and chopped with a blender to a mushy state.
- In a separate bowl, beat one egg with a whisk, and then add 40 g of granulated sugar, 2 g of vanillin and 1 pinch of salt to it. Thoroughly mix the components, trying to dissolve the dry components as much as possible.
- Pour 200 ml of whey into the resulting mixture and sift 100 g of wheat flour through a fine sieve.
- Beat the ingredients with a whisk until a homogeneous consistency is obtained.
- Add 100 g whole grain flour. In no case do not sift this kind of flour, otherwise the most useful part of this product will remain in the sieve.
- Stir the ingredients until smooth, and then mix in the dough 5 g of baking soda.
- Pour another 200 ml of serum there and mix everything thoroughly. Instead of whey, it is completely allowed to use kefir or any other dairy product.
- To give pancakes a special taste and aroma, pour 2 g of ground cinnamon into the dough.
- The last ingredient in the dough is the main ingredient - pumpkin puree, which will give the upcoming treat a stunning golden yellow color and a wonderful aroma.
Make pancakes
- Lightly grease the hot pan with vegetable oil, and then bake pancakes on both sides.
- We put the products on a flat plate and proceed to the preparation of the filling. To start, cut as small as possible 100 g of dates, while removing the stone, if any.
- We spread the pancake on a flat surface, and then put some of the cottage cheese on it.
- Lay out a few pieces of dates on top of the curd and carefully wrap the pancake in a roll.
- We cut off the edges of the product, and then divide it in half.
