Step cooking
- Take the chicken eggs (3 pieces) and separate the proteins from the yolks, laying them in different containers. Beat the whites with a mixer into a strong foam.
- Whisk the yolks in another bowl until white foam. Gradually pour a sugar (glass) into the proteins in a thin stream and in portions and do not stop whisking at the highest power of the mixer.
- If you want to add cinnamon to the cake, add it at this stage, putting cinnamon powder (a teaspoon without a hill) to the proteins. Continuing to beat, pour the whipped yolks separately to the whites, pouring them in a thin stream.
- Sift wheat flour (glass) through a sieve and add to beaten eggs in small portions, kneading the dough with a mixer. You should have a consistency dough, like thick sour cream.
- Wash the apples (3-4 pieces), peel and remove the core. Cut apples into large slices.
- Grease the mold with butter (1-1.5 teaspoon) and pour 1/3 of the dough into it. Spread the dough evenly on the bottom of the mold with a silicone spatula or spoon.
- On top of the dough, evenly spread all the apples and pour them with the remaining dough.
- Bake the cake in an oven preheated to 180 degrees for 30-35 minutes. Check the readiness of the pie with a wooden skewer, trying to get only in the dough. Having taken out the finished cake from the oven, do not rush to remove it from the mold, but let it cool almost completely in it.
- Then circle the edges of the cake in the shape of a knife and turn the cake on a dish or a large plate.
- From above, if desired, the cake can be decorated with icing sugar, sifting it through a strainer.

- choose fresh eggs - fresh protein holds its shape better;
- for whipping, take eggs from the refrigerator - they beat better;
- a pinch of salt added to the proteins will speed up the whipping process;
- choose flour and finely ground flour - be sure to sift it before kneading dough;
- choose sweet and sour apples;
- for the given number of ingredients, choose a form of not very large diameter - in a smaller form, the biscuit will turn out higher.
