The recipe describes the preparation of shortbread cookies without wheat flour (gluten-free) and milk at home. Cookies are intended for those who suffer from celiac disease (gluten intolerance) or for those who, due to their diet or lifestyle, cannot use confectionery with wheat flour.
- To get a gluten-free flour mixture, combine in a deep bowl rice flour (240 g), potato starch (30 g), corn flour (50 g). Put butter (180 g) at room temperature in a deep bowl. Beat with a mixer until smooth.
- Add granulated sugar (120 g) to the butter. Beat with a mixer until sugar dissolves. Beat in a chicken egg (1 pc.). Beat with a mixer until smooth.
- Add vanilla sugar (5 g), baking powder for dough (5 g), table salt (1/4 tsp) to a bowl. Continue whisking for 1-2 minutes. Sift the gluten-free flour mixture (320 g) into a bowl through a strainer.
- Mix the mixture with a mixer until you get crumbs, then knead the dough with your hand, knocking it together.
- Spread the silicone cook mat. Next to it lay a sheet of parchment paper, the size of which corresponds to the size of the baking sheet. Cut two squares out of cling film about 10 cm by 10 cm. Put one square on the mat. Put a second piece of cling film on the cookie cutter. Nip off a piece of dough, put in a mold on top of the film, use your fingers to shape the dough. Put the resulting cookie on the first piece of film, use it to transfer the product to a sheet of parchment paper. The cling film is used due to the strong adhesion of the dough to any surface.
- Form cookies in this way from the whole dough. Drag the parchment sheet by the corners onto the surface of the baking sheet.
- Place the baking tray with cookies in the oven, heated to a temperature of 180 ° C. Bake for 15-20 minutes until the cookies are lightly browned.
Gluten-free shortbread cookies are fragrant and crumbly. If desired, raisins, pieces of chocolate, candied fruit, dried berries, fruits can be added to the dough. To give an attractive appearance, the product can be greased with egg white and sprinkled with cinnamon, cocoa, sesame seeds, confectionery powder. Ready cookies can be decorated with a caramel syrup net.
