Ingredients

powdered sugar | 210 g |
vanillin | 0.5 g |
Step cooking
- We take 3 chicken eggs and separate the proteins from the yolks.
- Beat the proteins at a slow mixer speed for 2 minutes.
- To powdered sugar weighing 210 g, add 0.5 g of vanillin.
- The resulting dry mixture is gradually introduced to the protein foam, continuously whipping it at medium speed.
- We transfer the whipped cream into a pastry bag.
- We put the oven to heat up to 100 degrees. We cover the baking sheet with parchment paper and squeeze the cream onto it, forming meringues (the whole cream should be enough for 70 small cakes).
- We send the pan to the preheated oven for 1 hour. The dish is ready!
Useful Tips
Many housewives are afraid to cook meringues, because they consider this a rather complicated process. In fact, if you follow the following series of rules, your meringues will always have the desired structure:
- Pull the eggs out of the refrigerator in advance and let them warm to room temperature.
- The dishes in which the cream will be prepared should be absolutely clean, dry and non-fat. It is also better if it is glass.
- Hit at least one drop of yolk will nullify all attempts to get a thick and airy foam.
- You do not need to beat the proteins for too long, otherwise you will ruin their structure.
- Be sure to preheat the oven and put the baking tray with meringues on an average level.
- After baking the cakes, leave them to lie in the oven until it cools completely.
