Step cooking
To prepare yeast-free bread, you will need sourdough from whole grain flour, it is it that makes it possible for the bread to rise. If you don’t have one and you couldn’t find it, it’s not a problem at all - prepare it yourself in advance.
To do this, you will need several days and completely simple ingredients. In a jar, mix 50 g of rye flour and the same amount of purified water clockwise. To do this, use a wooden spoon, other materials can ruin the leaven. Then cover the jar with a cloth or napkin so that air enters it. Stir in the evening of the same day and cover again.
On the second day, at the same time in the morning, add 50 g of flour and water to the jar, and mix everything in the evening, too. On the third day, a specific smell should appear, and the leaven will grow in volume. Repeat again all the proportions of water and flour and mix. On the fourth day, repeat all the actions, the smell will already become pleasant. On the fifth day, you can use sourdough for bread. The part that remains in the bank is called the starter.
- You will need a natural sourdough. Either you have prepared it for the first use, or you will use the starter. In this case, thoroughly mix 2 tbsp in a bowl. l tablespoons starter with flour and water (160 g each). Leave the starter culture for 8-10 hours at room temperature. Then separate from the whole mass 180 g for bread in a separate bowl. And mix the rest with the starter in a clean jar so that it can be stored for another 10 days in the refrigerator.
- Remove the container from the bread machine and place the dough mixers in it. Then pour into the container 350 ml of water, 1.5 tbsp. l oil and 1 tbsp. l honey. Add 180 g of ferment and 2 tsp to all ingredients. salt, then pour 20 g of malt into a container. At the end, sprinkle 470 g whole grain flour.
- Place the container in the oven and turn it on. Then select the desired program for kneading the dough. When the dough is kneaded, remove the dough mixer with your hand or a special device.
- To give the bread a beautiful shape, flatten the dough with a spatula or by hand. Optionally, sprinkle bread with flax or sunflower seeds. Then carefully separate the dough from the edges of the container with a wooden spatula.
- Choose the right program for baking bread in your bread maker. When ready, turn off the bread maker and remove the bread with the help of oven mitts, as it is hot.
