Ingredients

Green buckwheat 1 stack
Millet 1 stack
Flax seeds 50 g
Water 150 ml
Olive oil 4 tbsp. l
Soda ½ tsp
Lemon juice ½ tsp
Salt 8-10 g

Step cooking

  1. On the eve of making bread, take 1 cup of green buckwheat and millet, fill them with water so that they swell. Then in the morning we rinse again the swollen cereals under running water.

  2. We grind 50 g of flax seeds in a coffee grinder to turn them into powder. Fill it with 150 ml of water at room temperature and leave to swell for 15-20 minutes.

  3. In a blender, we grind the swollen buckwheat and millet in turn to a paste. Combine them in a separate deep bowl. In the same bowl, add the swollen flax seeds, 8-10 g of salt (approximately 1.5 tsp), 4-5 tbsp. l olive or sunflower oil and ½ tsp. soda topped with the same amount of lemon juice or apple cider vinegar.

  4. Mix all the ingredients so that they evenly disperse. The basis of the dough is ready, but without it the bread will turn out to be fresh. To add flavoring shades to it, season to taste with seeds of sunflower, sesame or caraway seeds, aromatic herbs, sun-dried tomatoes, etc.

  5. Preheat the oven to 180ºС. Pour the dough for bread into a baking dish greased with vegetable oil and send it to the oven for 1 hour 20 minutes. Readiness is checked with a toothpick.

  6. We take out the finished bread from the mold and let it cool. We use it in the same way as ordinary: for sandwiches, toasts, eat with first and second courses.
