Step cooking
- Pour 300 ml of kefir into a convenient, deep dish, add 0.5 tsp. soda. Soda is needed so that kefir does not give sourness to ready-made whites. The dough can also be kneaded in milk. If you use it, then you can not add soda.
- Add one tablespoon of sugar. Sift 600 g of flour into a separate bowl. Add two tablespoons of flour to the kefir mixture.
- Add 20 g of crushed pressed yeast.
- Mix everything well to get a homogeneous mass without lumps. If you do not have pressed yeast, add 7 g dry. Cover with cling film or a towel and leave to rise for 15 minutes.
- After this time, add two chicken eggs to the mixture. If desired, one egg is enough.
- Add 100 ml of refined vegetable oil, one teaspoon of salt, mix well. It is very convenient to mix such a mass with a whisk.
- Gradually add 500 g of sifted flour, knead the dough.
- When it becomes sufficiently dense, sprinkle the working surface with flour, about 70-100 g, spread the dough and knead with your hands for about 10 minutes, until it has absorbed all the flour from the working surface. No more flour is needed, let the dough remain tender, stick to your hands.
- We lubricate the bowl with vegetable oil, spread the dough formed by the ball, cover it with cling film or a lid and stand for one hour.
- During this time we will prepare the filling. In a separate bowl, spread 500 g of ground beef. We clean the three onions, cut into very small cubes or pass through a meat grinder and send to the minced meat. Add salt, pepper to taste, mix, the filling is ready.
- After this time, sprinkle flour on the work surface, spread the dough and knead a little. We divide it into two parts. From one roll up the tourniquet, divide it into small, equal parts.
- We roll out each part with a flat cake, in the middle we put half a tablespoon of minced meat, level it.

- Grease a baking sheet with vegetable oil or cover it with parchment paper, spread the whites. Cover with a towel, leave to rise for 10 minutes. At this time, turn on the oven 180 degrees.
- After proofing, we send the whites to the oven, bake at a temperature of 180 degrees for 30-40 minutes.
