Step cooking
- First, boil the eggs: put 1 - 2 pieces (depending on size) in cold water and put on the stove. So that the shell does not burst, it is better to salt the water. Also make sure that the water completely covers the eggs. Since hard boiled eggs are needed for this recipe, you need to cook them after boiling for 10-12 minutes. Then take them out of the water and put them under cold water - this will make the shell easier to peel and not stick to the protein.
- Now we start preparing asparagus. In classic recipes, this vegetable is peeled, from top to bottom. But in this recipe you can only rinse the plant under running water and cut off the stiffened tips by 1 - 2 cm. The most delicious dishes are obtained from young fresh vegetables. Therefore, choose thinner stems, and rub them against each other before buying: they should make a thin creaking sound.
- We heat the pan and melt 20 g of butter on it.
- When the oil has warmed up, lay the asparagus and let it soak in oil over medium heat for 3-5 minutes. Salt to taste. Pepper
- Then we turn the vegetables to the other side. To do this, you can use a spatula or gently shake the pan so that the shoots turn over. Fry for about 5 minutes. The indicator of readiness is the appearance of a golden crust on the surface of vegetables.
- After the product is browned, add 2 tbsp to the pan. l sour cream. Stir and turn off the fire. We wait a minute for the sour cream to melt and soak the vegetables.
Important!When adding sour cream to the pan, it is important to immediately turn off the heat and not overexpose the ingredients on the stove for longer than one or two minutes. In a hot frying pan, sour cream after 1 - 1.5 minutes will begin to curl, worsening the appearance and taste of the dish. - Peel the boiled egg and finely chop or crush it into pieces with a fork. Add 1 - 2 tsp. chopped green onions.
- We start serving: lay the asparagus on a plate so that the vegetables lie parallel to each other, and all the buds are directed in one direction.
- Sprinkle with egg-onion mixture on top. For the beauty of serving, you can put a lemon slice sprinkled with salt on the side. You can serve European delicacy in another way: with mashed potatoes, ham and boiled egg halves.
