Step cooking
- We wash 400 g of beef under running water and remove excess liquid from the surface with a paper towel. We cut the meat into strips across the fibers of about 5 × 1 cm.
- Peel 2 onions from the husk and cut them into small cubes.
- Pour 50 g of sunflower oil into the pan, put on medium heat and wait until it warms up well.
- When the oil has warmed up, put the beef into strips into a frying pan and fry it, stirring it regularly with a spatula until it is covered with a golden crust, after which we take out the meat and transfer it to a deep container for a while.
- Put 50 g butter in a pan and wait for it to melt.
- When the butter has melted, add the chopped onion to it and fry until golden, do not forget to stir regularly.
- When the onion has acquired a golden hue, sprinkle it on top of 1 tbsp. l flour and quickly mix with a spatula so that the flour does not burn, then add 150-200 g of sour cream 15% and 1 tbsp. l tomato paste, add 150-200 g of water and again mix thoroughly until smooth. Stirring occasionally, bring the sauce to a boil and let it boil for 2-3 minutes until it thickens.
- After 2-3 minutes, add fried pieces of beef to the sauce, 2 tsp. salt, 1 tbsp. liters of sugar and 0.5 tsp. ground black pepper, mix thoroughly, boil all together for 3-4 minutes, stirring so that the meat does not burn.
- After 3-4 minutes, turn off the fire, put the beef stroganoff on the dinner plate to the side dish and serve.
Important! If you plan to cook beef stroganoff for a large number of people, you will have to fry the meat in several stages. Otherwise, the meat will begin to secrete juice and stew in it, because of which a golden crust will not form.
