Step cooking
- In a deep bowl add 80 g of softened butter and beat with a mixer until splendid.
- Separately combine 140 g of sugar, 1 tsp. vanilla sugar and ¼ tsp. salt, mix. Pour sugar in parts to butter, continuing to whisk with a mixer.
- One egg at room temperature is driven into a creamy sugar mass, beat for a few minutes until a lush, creamy consistency is formed.
- Two bananas, mashed with a fork, mashed. It is important to use bananas that are very ripe or even ripe. The blacker the bananas, the tastier the cupcake will be, as they are very soft and have a rich, sweet taste.
- Next, add the banana puree to the dough, mix. Pour 1 tbsp. l any alcohol: rum, cognac, liquor. Alcohol will evaporate during baking, only a pleasant taste will remain. If you do not want to use alcohol or it was not at your fingertips, you can add orange juice instead of alcohol.
- Then sift 20 g of wheat flour to make it lighter and more airy. To it we add 0.5 tsp. soda, ¼ tsp ground nutmeg and 50 g of coconut flakes, mix, so that all dry ingredients are evenly distributed. Optionally, you can replace part of the wheat flour with whole grain or oatmeal. You can do the same with coconut flakes. It can be replaced with any nuts, dried fruits, or not at all.
- In parts we introduce dry ingredients to liquid ones, and already without using a mixer, knead the dough well.
- Lastly, pour 50 ml of kefir at room temperature. Instead of kefir, you can use any dairy product: sour cream, yogurt. You can add milk, only then it is recommended to extinguish soda with vinegar or lemon juice. Stir the dough until smooth.
- Lightly grease the baking dish with butter and sprinkle with flour. Then shake off the excess flour.
- We shift the dough into a form and level it. The cake is sent to the preheated oven to 180 degrees for 50 - 60 minutes. The baking time depends on your oven, it is better to check the readiness with a wooden skewer or a toothpick. If it is dry and clean, then the cupcake is ready.
- Baked cupcake leave to cool in shape. Then we shift it to the grill or plate. Sprinkle with powdered sugar on top.
- A banana cake is very tender, with a rich spicy taste, soft and airy.
