Step cooking
- Thoroughly wash 2 eggplants and 2-3 fresh tomatoes. Cut the eggplants into small strips, put them in a bowl and add 15 grams of salt. Mix and let stand for 15 minutes to leave the bitterness.
- Tomatoes are also cut into strips and put in a separate container.
- Hard boiled 4 chicken eggs, peeled and cut into strips.
- I wash 5-6 leaves of fresh basil and chop randomly.
- Peel 2 cloves of garlic and chop them.
- We place the eggplants in a colander and rinse under running water.
- We put a non-stick frying pan on the stove, pour the necessary amount of vegetable oil and fry the eggplants to a golden color.
- When the vegetable is fried, put it on paper towels so that the excess oil is gone. Leave to cool. We put the cooled eggplant in a plate, add garlic, tomatoes, basil, and mix everything thoroughly.
- Add black ground pepper to taste, 40 grams of mayonnaise and mix again.
Decoration methods and serving options
- It is not recommended to add a lot of mayonnaise to dishes with eggplant. The fact is that after heat treatment, the vegetable already contains a lot of fat. Try to use low-calorie mayonnaise.
- Sprinkle the aubergines with salt while they are still raw. It is more convenient to do this in a colander mounted on a bowl. Moisture containing bitterness will drain through the holes, and the lower pieces of the vegetable will not absorb it, as would happen in a bowl.
- You can also add processed or hard cheese to such a dish. These ingredients go well with eggplant and garlic.
