Step cooking
- Cut the tails of eggplant. Cut the eggplant into slices 4-5 millimeters thick. Salt them.
- We heat the pan, pour the vegetable oil to taste and lay out the eggplant.
- On a small fire, fry the eggplants on each side for 4 minutes under the lid.
- Walnuts pass through a meat grinder.
- Cut cilantro into large pieces and also pass through a meat grinder.
- We send garlic to the meat grinder.
- We chop hot chili pepper and send to a meat grinder.
- We remove the eggplants from the pan and put them on a plate.
- Add walnuts to the mixture of cilantro, garlic and red pepper.
- Add salt, wine vinegar, coriander, saffron and uzo suneli. Mix thoroughly.
- If the mixture is dry, add cold boiled water.
- We collect eggplant. On each slice of eggplant, lay out the filling and evenly distribute.
- We spin the eggplant rolls.
- Immediately lay out in the form in which the dish will be served.
- Decorate eggplant with onion rings and herbs to taste. You can decorate with pomegranate seeds.

The process of creating such an appetizer is quick and easy. You will spend no more than 40 minutes to make this juicy and tasty snack. It is best to cook a snack a day before serving. For example, if you are planning a feast or a celebration for tomorrow, make a snack in the evening and serve it the next day. So the snack in the refrigerator will become even tastier when all the ingredients are combined with each other.
Traditionally, the appetizer is served with onion rings and pomegranate seeds, but you can experiment with serving as you like. For example, you can bake eggplant in the oven with cheese. But so that this venture succeeds, do not fry the eggplants until cooked in a pan, but only slightly fry them on both sides. Put this appetizer in a baking dish, sprinkle with plenty of cheese and send to the oven for 10-15 minutes.
