Step cooking
- We divide four eggs into squirrels and yolks. While yolks set aside. Add a pinch of salt to the proteins and beat with a mixer until a foam forms. Then add one tablespoon of sugar and beat until a white, thick mass.
- Quickly add the remaining sugar (180 g) and 10 g of vanilla sugar to the yolks, beat with a mixer for a minute, so that the yolks lighten, the sugar melts a little. We take two large oranges and rub the zest with a fine grater. It is very important not to capture the white part of the peel, otherwise the finished baked goods will have a bitter taste. Send the zest to beaten egg yolks.
- Squeeze the juice from two oranges, it will turn out about 165 ml. Pour 75 ml of juice to the yolks. Sift 300 g of flour and add half to the yolks and pour 10 g of baking powder. Pour half (50 ml) of vegetable oil and mix all the ingredients with a mixer to get a homogeneous, dense mass. We pour another 75 ml of juice, 50 ml of vegetable oil into it, pour 150 g of sifted flour. Again, mix the mass with a mixer. The mass is magnificent. Thanks to the baking powder, bubbles immediately begin to appear in it.
- Now, in three runs, add whipped proteins to the test, mix the mass with a spatula or a hand whisk. At this stage, the mixer no longer needs to be used.
- Lubricate the cake pan with plenty of butter. We use a mold with a diameter of 21 cm, its height is 10 cm.
- Pour all the dough into the mold and send it to the oven preheated to 180 degrees. Bake for 40-45 minutes. The baking time in each oven may be different. Therefore, after 35-40 minutes, if he is well browned and rose, we check for readiness. We stick it with a wooden stick, if the dough sticks to it, then the cupcake is not ready yet. We take out the finished baking, turn it upside down on a flat serving dish and take out a cupcake. You can already eat it in this form when it cools down. But if you want to decorate it, we suggest using glaze.
- Mix 100 g of powdered sugar with 15 ml of fresh orange juice. Juice into powder gradually add a teaspoon. It may need less.
- Pour the icing on the cupcake, if desired, you can sprinkle with orange peel. For decoration, you can use melted black chocolate, chopped nuts, coconut.
