Step cooking
- Wash the orange well (1 pc.), Wipe with a towel. Using a fine grater, peel the zest from the orange. Try not to touch the white part of the peel so that the cookies do not bitter.
- Sugar (120 g) pour into a deep plate, add the resulting orange zest.
- Mix well with a spoon until smooth. After mixing, the zest flavor is absorbed into the sugar.
- Put in a deep bowl the butter softened at room temperature (100 g).
- Pour granulated sugar with orange zest into a bowl.
- Beat with a mixer at low speeds until a lush mass is obtained.
- Cut the orange in half, squeeze the juice from one half. It should turn out 30 ml of juice, if there is less juice, squeeze it out of the second half. Add the egg (1 pc.) And orange juice (30 ml) to the oil mass.
- Stir with a mixer until smooth.
- Pour wheat flour (250 g) into a metal strainer, add dough baking powder (5 g), table salt (3 g) on top.
- Sift the ingredients into a bowl of butter.
- Using a mixer, bring the dough to a homogeneous state.
- Tighten the bowl with the dough with cling film, put in the refrigerator for 1 hour. After an hour, remove the dough from the refrigerator.
- Pour granulated sugar (120 g) and icing sugar (100 g) into two different plates. Cover the pan with parchment paper.
- Take a tablespoon of dough and form with your hands (roll out in your palms) balls of small diameter, about the size of a walnut.
- First, roll the molded ball in sugar in one layer, and after that - a dense layer in powdered sugar. Pouring in sugar does not allow the dough to absorb powdered sugar during baking. That is why when baking cookies, a beautiful cracked surface is obtained.
- Put cookies on a baking sheet covered with parchment paper, 4-5 cm apart.
- Place the pan in an oven heated to 180 ° C. Bake cookies for 12-15 minutes.
- Store cooled cookies in a tightly closed container at room temperature.
The cookies are fragrant and delicate, on top it is covered with a crisp crust with a net of beautiful cracks, and inside it is soft. If desired, you can add other ingredients to the dough that complement the taste of orange, for example, small pieces of chocolate or candied fruit.
