Step cooking
The most appropriate meat for entrecote is a piece of beef on the bone, cut between 9 and 11 ribs. You can use a piece of meat without bone. The meat in this part is the softest, not requiring long cooking. It turns out juicy and tender due to the thin veins of fat that permeate the whole piece, which melt and soak all the meat during frying.
- We get the meat in advance from the refrigerator before cooking, it should be at room temperature. Wash 500 g of beef under running water and dry with paper towels, it should be dry. Some cooks recommend beating meat with a kitchen hammer before frying so that it becomes softer. Next, beef should be pickled. For pickling, we use the simplest method, which does not require a large number of spices and spices. Just rub the pieces of meat well with sea salt and freshly ground black pepper.
- Then carefully grease the meat with olive oil or odorless vegetable oil on all sides.
- Leave the meat to marinate. The longer the beef is infused, the more it is saturated with spices, and as a result it will be more juicy and tender. In the refrigerator, meat can be marinated for 10-12 hours, at room temperature this process is much faster.
- Use a grill pan for frying. If you don’t have one, take an ordinary pan with a thick bottom and non-stick coating. Heat the pan well over high heat, no need to pour oil. Put the entrecotes in the pan and fry on one side for 5 minutes, turn on the other side and fry another 5 - 7 minutes. The dish is medium-fried. It is important to remember that inside the meat should be a pale pink color. The main thing is not to overcook the meat. For a well-cooked entrecote, you will need to hold the meat for another 2 minutes on each side.
- If your pieces of entrecote are large and thick, they may not fry in a pan. Therefore, you should first fry the meat until golden brown in a pan, and then bring to readiness in the oven, preheated to 160 degrees, 10-15 minutes. After cooking, the meat should be laid on a wooden surface or a warm plate and allowed to rest for a while.
