Step cooking
- We take out the butter from the refrigerator, cut into pieces so that it becomes a little softer at room temperature. Sift the flour through a sieve onto a work surface. Add salt to the flour. Spread slices of butter.
- Grind the butter and flour well until smooth.
- Break one chicken egg into a bowl and beat with a fork. We form a hill of flour and butter with a recess on top. Pour a beaten egg into this hole.
- Knead the dough. We form a ball out of it and wrap it in cling film. We send it to the refrigerator for 30-50 minutes.
- At this time, we cut the pumpkin peeled from the skin and seeds into small squares.
- We spread the slices of pumpkin in a pan, pour water and put on fire.
- Cook the pumpkin until tender, drain the water. Grind the pumpkin in mashed potatoes with a blender. To make the pumpkin more delicate, you can pass the mashed potatoes through a metal sieve.
- Add cream to the finished pumpkin puree and break two eggs. Add sugar, cinnamon and vanillin.
- Beat the whole mass well with a mixer until smooth.
- Turn on the preheat oven to 190 degrees. We take out a ball of dough from the refrigerator and place it between two sheets of baking paper. We roll out the dough with a round layer 5 mm thick.
- The rolled layer is placed in a round baking dish with low sides. We cut the dough along the edge so that it is located at the bottom and along the edges of the form.
- We cover the dough with baking paper and pour the beans for oppression on top of the paper. Beans should fill in all the remaining space in the form. This is done so that during the baking process the dough does not rise and bake evenly.
- Bake for 15 minutes.
- After this, take out the dough, remove the beans and baking paper, pour the pumpkin mass on the dough so that it fills everything to the brim.
- We put bake in the oven at a temperature of 180 degrees for 50-55 minutes.
