- For the dough to fit well, all the ingredients for its preparation must be warm, at least at room temperature, so it is better to remove them from the refrigerator in advance. Lightly heat (in the microwave or on the stove) 250 ml of milk with the highest fat content. Melt (do not overheat!) 90 g of butter or margarine (butter is preferable). Milk and butter should not be hot, not warmer than 38-40 ° C, otherwise the yeast will stop functioning and the dough will not rise. Pour warm milk and melted butter into the mixer bowl. Then we introduce 2 eggs - it is better to let them out first in a cup, and only then send them to other products.
- Add vanillin on the tip of the knife. You can take vanilla sugar (1 sachet) or vanilla extract (according to the instructions on the package). Then pour the dry ingredients: 14 g of dry yeast, 60 g of sugar, a pinch of salt. Add 640 g sifted (preferably several times) flour. In a stationary mixer or combine, you knead the dough for 5-8 minutes, starting at minimum speed, and gradually increasing speed. If you have a hand mixer, first add half the sifted flour and mix well at low speeds. Then add the remaining flour and continue kneading first with a spoon (spatula), and then manually on the table. It takes about 15 minutes. The finished dough should not stick to your hands, but should be flexible and soft.
- We leave the dough to approach in a warm place, covering with a towel or film for about 1 hour. Faster dough rises in a slow cooker, this contributes to uniform heating without temperature changes. To do this, grease the bottom of the multicooker bowl with butter or vegetable oil, put the dough and select a temperature of 35 ° C and a time of 30-40 minutes in the menu.
- We put the dough on the table, sprinkled with flour. If you have a silicone mat, then flour is not needed. We crush the dough and roll it into a layer about 1 cm thick.
- We cut out donuts in a special form. If there is no such shape, improvised means are suitable: cooking rings, glasses or cups with a diameter of 6-9 cm, and the middle can be cut out with a small mold - a pile, a lid, etc.
- We cover the baking sheet with parchment and carefully using the wooden spatula we transfer the cut rings to it. We send for proofing in a warm place for 30-40 minutes.
- In a deep frying pan, heat 250-300 ml of vegetable oil and reduce the heat to medium. It is important not to overheat the oil, otherwise the donuts will be very fried on top, but will remain moist inside. Carefully lower the donuts into the hot oil and fry until golden brown on both sides.
- We take out a slotted spoon on a dish lined in 3-4 layers with paper towels, let it cool completely.
- Let's make chocolate icing to pour the finished donuts. To do this, break a bar of chocolate (black and / or milk) into pieces, pour 2-3 tbsp. l very hot cream of the highest fat content and stir with a spoon until the chocolate melts.
- You can take white chocolate, melt it in the same way, and then dye it with different colors with food colors. Sugar dyes are first dissolved in a small amount of cold water (1/4 tsp), then added to melted chocolate and mixed thoroughly. The main thing is not to pour sugar dyes directly into chocolate (cream), otherwise a uniform color will not work. Gel dyes are easier: just drop one drop into chocolate (cream) and mix thoroughly to get the desired color.
- You can make several types of chocolate glaze at once and decorate donuts by combining colors.
