Step cooking
- If you managed to find baked milk in the store, skip this step and proceed to the next. If not, do not be discouraged, it can be cooked at home. According to the recipe, we need 200 ml of baked milk, which means we take 400 ml of ordinary milk. Pour milk into a small aluminum pan and set it on fire. Bring to a boil and turn on the fire to the minimum. Do not forget to stir occasionally and simmer for 3-4 hours on fire. The foam needs to be removed. Open the cover or remove it altogether.
- In a deep bowl (you can bowl for the mixer) drive 2 eggs, and from the third we take only the yolk. Mix the protein in a small container, close it tightly and put it in the refrigerator - it will come in handy for decorating paska.
- Pour 200 g of sugar into the eggs, a pinch of salt and 1 tsp. vanillin. Mix a little so that the products disperse.
- Cut the butter at room temperature (that is, you need to get it out of the refrigerator early), cut into small pieces and add it there.
- Finely crush live yeast (30 g) with a fork or knife and also send to the mixture.
- Baked milk should be pleasantly warm 37-40 ° C. Cold does not work, be sure to heat it. They fill our mixture.
- Using a mixer, beat the mixture into a homogeneous mass, first at low rpm for 5 minutes, then at maximum speed for another 5 minutes.
- Opara is almost ready. Cover with a towel and leave warm for 8-10 hours. Very convenient: they made a sponge for the night, and in the morning you can already knead the dough.
- After 8-10 hours, the dough has already risen, and now we sift the flour (500 g) directly into it.
- Immediately add 50 g of raisins and 1 tsp. cognac. And now we mix everything very carefully with a wooden spoon (or silicone). The dough should come out uniform and malleable.
- When the flour is completely interfered, cover the bowl with a napkin and leave it in a warm place for 30 minutes.
- We approach the dough slightly with hands. That's all, the Alexandrian dough is ready!
- To put the dough into molds, grease the hands with vegetable oil and form balls of the desired size from the dough. The dough should occupy 1/3 of the volume of the mold.
- In the forms, the dough should rise again, and then it can be baked at a temperature of 180 ° C for about 40-50 minutes. Cool ready-made paska and decorate as you wish (do not forget about the protein in the refrigerator).
