Ingredients
- wheat flour - 500 g

Step cooking
- To start, prepare the dough for the pie. In a deep bowl, beat 3 chicken eggs. Then add 1 tsp to a bowl. salt and 100 ml of cold water. Using a fork, mix everything well until smooth.
- Sift approximately 400 g of wheat flour into a bowl and knead the dough with a fork. When the dough has thickened, continue to knead it with your hands and, if necessary, add more sifted flour.
- Place the dough on the work surface and knead the dough well for about 10 minutes, so that it becomes sufficiently elastic and homogeneous. Put the dough back in a bowl, cover it with a kitchen towel and leave it to rest at room temperature.
- In the meantime, prepare the filling for the cake. In a deep bowl, place 200 g of butter, then melt it in the microwave. In a separate deep bowl, grate 250 g of hard cheese to taste and 600 g of suluguni cheese on a coarse grater. Grated cheese mix well with a spoon for even distribution. If the cheese is not salty enough, you can salt it a little if you wish. For this pie, take at least 500 g of cheese. You can use feta cheese, mozzarella, Adyghe cheese, etc.
- Sprinkle a small amount of flour on the working surface and knead the dough in it. Cut 1 piece of dough and set aside, then roll the rest of the dough into a sausage and cut it into 7 equal parts smaller than the first.
- Roll the sliced 7 parts of the dough into flat cakes and place them in a bowl, cover with a towel so that the dough does not dry. Roll the first piece of dough, which is larger, into a very thin layer using a rolling pin. Lubricate the baking dish liberally with melted butter using a silicone brush. Put the rolled out dough into a form and evenly distribute on the sides. Grease the surface of the dough with butter.
- Pour water into the pan, salt it, and install a metal sieve on top. On the working surface, roll out the next layer of dough and boil it in water for about 10-15 seconds after boiling, then immediately transfer it to a separate pan with cold water.
- Dry the cooled dough on paper towels, then put the boiled layer on the first greased layer in the mold and generously grease it with butter.
- Roll out the next layer of dough and boil, while changing cold water for each new layer. Dry the dough and also lay it in a mold on top of the remaining layers, then grease well with butter. Sprinkle this layer well with cheese. Roll out the rest of the dough, except the last layer, roll it, boil it, dry it, put it in a mold, grease it with butter and sprinkle with cheese.
- Roll out the last layer of dough on the work surface and cover it with the whole pie, connecting the edges. Make a few punctures on the surface and grease the cake liberally with the remaining butter.Let the acchma brew for about 0.5-2 hours.
- Preheat the oven to 200 ºС and send the cake to bake for about 30-40 minutes. When ready, chop the acchma into batch slices and serve hot.
